Ingredients
- 6 tbl olive oil
- 3 large potatoes cut into ¼ inch fries
- 1 ½ cups panko bread crumbs
- 1 clove garlic grated
- salt & pepper
- ¼ cup dijon mustard
- 2 eggs beaten
- 1 cup flour
- 1 lb tilapia cut into 1-inch-wide strips
- malt vinegar
Instructions

preheat oven to 500 degrees

mix potatoes with 4 tbl olive oil and salt & pepper

place potatoes on a sheet pan on bottom rack and bake for 15 minutes, turning potatoes

heat 2 tbl olive oil and saute bread crumbs, garlic, salt & pepper until golden 4-5 minutes

mix mustard and egg
-
season fish with salt & pepper
-
dredge the fish in flour. then egg/mustard and then panko
-
place fish on a wire rack over a sheet pan
-
reduce oven to 450 degrees

bake fish on top rack and potatoes on the bottom until browned 10 -15 minutes
-
serve fish with baked fries and malt vinegar
