Ingredients
- 1 ½ lbs flounder
- salt & pepper
- 3 tbl butter
- 1 shallot diced
- ¼ cup white wine
- ¼ cup heavy cream
- ¼ cup panko bread crumbs
- 1 tbl chopped parsley
Instructions

preheat oven to 450 degrees
-
sprinkle fish with salt & pepper
-
use 1 tbl butter to grease a 9x13 inch baking dish
-
sprinkle bottom of the dish with ½ the shallots and salt & pepper
-
roll fish up and place seam side down over shallots
-
pour wine and heavy cream over fish
-
sprinkle top with bread crumbs, the remaining shallots, parsley, salt & pepper
-
dot with remaining 2 tbl butter
-
bake for 20 minutes until breadcrumbs are browned and fish is cooked thru
