this is a boneless version of the chicken savoy made famous at the Belmont Tavern. Very weight watchers friendly at only 6 points per serving.
Ingredients
- 4 chicken cutlets
- salt & pepper
- 3 tbl olive oil
- 4 cloves garlic
- 1 tbl dried oregano
- 1 tsp dried thyme
- 1/3 cup grated locatelli cheese
- 1 cup red wine vinegar
Instructions

pre-heat oven to 450 degrees

salt & pepper chicken pieces

heat in 1 tbl oil in a cast iron skillet

place chicken in the skillet and saute until golden brown on one side.

blend together the 2 tbl olive oil, the garlic, the oregano, the thyme and the cheese in a paste.

turn chicken over and spread evenly over the cooked side of the chicken.

transfer skillet to the oven and bake 10 minutes until done.

remove from oven

add 1 cup of red wine vinegar to the pan.

deglaze and bring to a boil

spoon sauce over the chicken.

serve chicken with the vinegar sauce.
