Ingredients
- 1/8 cup canola oil
- 1 lb. hot or sweet sausage sliced into 1-inch pieces
- 2 boneless chicken breasts cut into 1-inch chunks
- 1 green pepper sliced into strips
- 1 yellow pepper sliced into strips
- 1 large onion sliced
- 1 tsp garlic minced
- ½ cup chicken broth
- ½ cup white wine
- 1 cup hot and sweet vinegar peppers sliced
- ½ cup vinegar from peppers
- 1 tsp dried oregano
- salt and pepper
Instructions

heat oil in a large skillet

cook sausage until brown on both sides

remove sausage and cut in 1 inch pieces

salt and pepper chicken and sauté in same pan until browned and cooked through

add peppers and onions and cook until soft

add garlic and cook for 2 more minutes

add sausage back into pan

add wine and chicken broth and bring to a boil

and in peppers, vinegar and oregano.

cover and simmer until cooked through, about 10 minutes
