chicken taco salad pops with flavor from mixing cilantro into the lettuce
Ingredients
- 2 boneless skinless chicken breasts
- taco seasoning
- olive oil
- 2 ears corn or frozen fire roasted corn
- 2 to matoes dices
- 1 head romaine lettuce chopped
- 1 bunch cilantro
- 1 avocado diced
- ½ cup shredded jack cheese
- 3 scallions sliced
- crushed tortilla chips
salsa ranch cilantro lime dressing:
- ¼ cup salsa
- ¼ cup ranch dressing
- 3 tbl chopped cilantro
- juice and zest of 1 lime
Instructions

make dressing

preheat grill if using

sprinkle chicken with taco seasoning

heat oil in a pan and cook chicken 5-6 minutes per side until cooked through

cook corn in same pan as chicken until charred

or grill corn and chicken together 10 minutes, until corn is charred and chicken is cooked through

dice chicken and remove corn from the cob

mix lettuce with all but 3 tbl chopped cilantro and the scallions

serve with diced tomato, diced chicken, grilled corn, diced avocado and jack cheese

toss with salsa ranch dressing and top with crushed chips

mix all the ingredients together and let sit while you make the salad
