Ingredients
- 1 large package chicken thighs
- salt & pepper
- 1 cup honey
- ½ cup dijon mustard
- ¼ cup white wine
- ¼ cup canola oil
- 1 head curly endive or any lettuce you like torn into pieces
- red cherry tomatoes halved
Instructions

preheat oven to 450 degrees

season chicken with salt & pepper and place in a roasting dish

mix honey, dijon mustard, white wine and canola oil and set aside ½ cup

pour remaining dressing over the chicken and marinate for 10 minutes

roast chicken for 30 minutes basting with the marinade

toss lettuce and tomatoes with ¼ cup dressing

serve chicken over the top of the salad and serve with remaining dressing
