Ingredients
- ½ lb breakfast sausage
- 1 bag frozen corn
- 1 cup cornmeal
- 1/.2 cup flour
- 1 tbl sugar
- salt & pepper
- ½ tsp baking soda
- ¼ tsp baking powder
- cayenne pepper
- 1 ¼ cups buttermilk
- 2 eggs
- 1 bunch scallions chopped
- 4 tbl butter divided
- orange-honey butter
- 1 stick butter
- ½ cup honey
- zest of 1 orange
Instructions

cook breakfast sausage in a cast iron skillet until browned

remove and brown corn 5-6 minutes

remove and wipe skillet clean

mix flour, sugar, 1 tsp salt & pepper, baking soda, baking powder and a pinch of cayenne

mix buttermilk and eggs

add wet ingredients to dry ingredients and mix together

fold in sausage, corn and scallions

heat 1 tbl butter in cast iron skillet

add batter to the pan to make corn cakes

cook 2-3 minutes until brown and flip over

cook 1-2 minutes more

add additional butter between batches as needed

serve with warm orange-honey butter
