Ingredients
- 4 ears fresh corn on the cob
- ½ small red onion diced
- 2 tomatoes diced
- 2 tbl red wine vinegar
- 4 tbl olive oil
- salt & pepper
- 8 large basil leaves slivered
Instructions

preheat grill to high
-
grill corn 8-10 minutes until charred on all sides
-
let corn cool for 10 minutes
-
cut corn off the cob
-
add red onion, tomatoes, red wine vinegar, olive oil salt & pepper and basil and toss
-
serve at room temp or refrigerate until ready to serve
