Ingredients
- 1 chicken cut-up or any chicken parts
- salt & pepper
- 2 tbl butter
- ¼ cup finely chopped onion
- 2 stalks celery finely diced
- 1 clove garlic minced
- 2 tbl curry powder
- 1 bay leaf
- 1 apple cut into ¼ inch dice
- ½ banana finely diced
- 2 tsp tomato paste
- 1 ½ cups chicken broth
- ½ cup heavy cream
Instructions

sprinkle chicken with salt & pepper

heat butter in a cast iron skillet

add the chicken skin side down, cook on high for 5-7 minutes

add the onion, celery and garlic

cook until vegetables start to get tender 5 minutes, turning chicken

add curry powder, bay leaf, apples and bananas and cook 5 minutes, tuning stove to low

add tomato paste and stir to combine

add chicken broth and cover and simmer 15 minutes until chicken is done

remove chicken and strain sauce through a sieve

add sauce back to pan with heavy cream and chicken and bring to a boil

serve hot
