Ingredients
- 1 whole chicken cut-up or any chicken parts that you like
- salt & pepper
- 3 tbl butter softened
- 1 tsp thyme
- 1 tsp rosemary
- 1 lemon cut in quarters
- 1 onion cut in half
- 6 cloves garlic smashed
- 1 bunch scallions cut in quarters
- 1 pint grape tomatoes cut in half
- 1 tbl olive oil
Instructions

preheat oven to 450 degrees

season chicken with salt & pepper

mix butter with thyme and rosemary

spread butter all over the chicken pieces, over and under the skin

place chicken in a roasting pan and scatter lemon, onion and garlic
-
roast for 25 minutes

toss scallion and tomatoes with olive oil and slat & pepper
-
add to the pan cook 10 minutes more
-
serve chicken with scallions and tomatoes and any pan juices
