way better than from a can, this homemade cream of tomato soup will have you licking the bowl.
Ingredients
- 2 tbl butter
- 1 onion thinly sliced
- 1 small carrot diced
- 3 cloves garlic minced
- 1 35 oz can plum tomatoes
- 4 basil leaves
- salt and pepper
- pinch of sugar
- 3 cups chicken stock
- ¼ tsp allspice or nutmeg
- 1 cup heavy cream
Instructions

heat butter in a pot

add onion and carrot and saute until soft about 7 minutes

add the garlic and cook 1 minute longer

add the tomatoes, 4 slivered basil leaves, salt & pepper, sugar, chicken stock and allspice

bring to a boil and simmer for 25 minutes, covered

puree with a hand blender and add the cream

season with salt & pepper and serve
