i made these meatball subs a little flat so they would fit on the roll and be easier to eat
Ingredients
- 1 lb meatloaf mix or ground beef
- 1 egg
- 1 cup bread crumbs
- ¼ cup milk
- ¼ cup locatelli cheese
- 1 clove garlic grated
- 3 tbl chopped parsley
- ¼ tsp crushed red pepper
- salt & pepper
- 2 tbl olive oil
- 1 jar tomato sauce
- ½ lb sliced mozzarella
- 4 sub rolls
Instructions

mix meatloaf mix, egg, bread crumbs, milk, cheese, garlic, parsley, crushed red pepper and salt & pepper

form into meatballs

heat olive oil in a skillet

brown meatballs on all sides

add sauce to pan, cover and simmer for 15 minutes

top meatballs with a slice of cheese and cover pan to melt

place meatballs on rolls and serve
