monterey chicken is similar to that served in chain restaurants and can be made in one pan. it's a meal the whole family will love.
Ingredients
- 4 boneless skinless chicken breasts
- 1 tbl olive oil
- salt & pepper
- 3 tablespoons honey
- 3 tablespoons soy sauce
- 3 tablespoons worcestershire sauce
- ½ teaspoon minced garlic
- ½ teaspoon salt
- 8 tablespoons barbecue sauce
- 1 cup shredded monterey jack cheese
- 8 slices apple-smoked bacon
- green onions sliced
- 1 roma tomato diced
Instructions

Preheat oven to 350 degrees

in a large skillet cook bacon

drain on paper towels and empty the grease from the pan

salt and pepper the chicken.

add olive oil and cook the chicken on medium high heat for 5-7 minutes on each side or until brown on each side and almost cooked thru.

add the honey, soy sauce, worcestershire sauce, garlic and salt to the skillet and bring to a simmer over low heat.

cook the chicken for 1-2 minutes, turning in the sauce

top with 2 tablespoons barbecue sauce, cheese, and smoked bacon.

Place in the oven for 5-10 minutes until the chicken is cook thru and the cheese is melted

garnish with green onions and tomato and serve immediately.
