Ingredients
- 1 small onion finely diced
- 1 stalk celery finely diced
- 1 carrot finely diced
- 2 cloves garlic minced
- 2 tbl olive oil
- 1 small can tomato paste
- 1 lb meatloaf mix
- ½ cup red wine
- ½ cup beef broth
- 1 28 oz can crushed tomatoes
- 1 tbl italian seasoning
- 1 bay leaf
- salt & pepper
- parmesan cheese
- rigatoni
Instructions

saute the onion, celery, carrot and garlic in the olive oil until soft

add the meat and cook until browned

add the tomato paste and cook stirring for 2 minutes

add the wine and let it evaporate

add the beef broth and bring to a boil

add the crushed tomatoes, italian seasoning, bay leaf, salt & pepper and simmer until ready to serve

serve over rigatoni topped with parmesan cheese

you can simmer this for 20 minutes or for 4 hours or anywhere in between
