this can be made with any pasta and any tomatoes. use fresh tomatoes in the summer or get a pack of the rainbow grape tomatoes for a more colorful version of this dish.
Ingredients
- 1 lb pasta
- salt & pepper
- 1 package red grape tomatoes
- 1 package yellow grape tomatoes
- sugar
- 2 tbl olive oil , divided
- 2 cloves , garlic, minced
- 1 tsp red pepper flakes
- 1 tsp oregano or italian seasoning
- parmesan cheese
Instructions

preheat oven to 450 degrees

toss tomatoes with a pinch of sugar, 2 tbl olive oil, garlic, red pepper flakes, oregano, salt & pepper

spread on a foil lined baking sheet and roast 20-25 minutes

cook pasta in boiling salted water and drain, reserving ½ cup cooking liquid

drain the pasta and place in serving bowl

add cooked tomatoes and their juices to the bowl, adding pasta water as needed and toss together

serve topped with grated parmesan cheese
