Ingredients
- 2 cups chopped pineapple
- 1 red bell pepper diced
- 1/2 small red onion chopped
- 4 green onions thinly sliced
- juice of 1 large lime
- 2 tbsp. extra-virgin olive oil
- kosher salt
- freshly ground black pepper
- 4 bone-in pork chops fat trimmed
Instructions
make pineapple salsa:

in a medium bowl, combine pineapple, pepper, onions, lime juice, and olive oil and season with salt and pepper.
pork chops:

season pork chops generously with salt and pepper.

in a large skillet over medium-high heat, heat oil.

add pork chops and sear until golden and the internal temperature reaches 145°, about 3 minutes per side

remove skillet from heat and let rest 3 minutes.
