make pork Parmesan instead of chicken for a change of pace
Ingredients
- 4-6 thin sliced pork cutlets or chops
- 1 cup panko bread crumbs
- 1 cup seasoned bread crumbs
- ½ cup locatelli cheese
- salt & pepper
- 3 eggs beaten with ¼ cup water
- ¼ cup olive oil
- sliced or shredded mozzarella cheese
- 1 jar marinara sauce
Instructions

preheat oven to 350 degrees

mix both bread crumbs and cheese in a shallow dish

put eggs and water in a shallow dish
-
season pork with salt and pepper
-
dredge pork in egg and then in breadcrumbs, pressing to adhere

place pork cutlets on a plate as you bread all the pieces
-
heat oil over medium-high heat
-
cook pork cutlets 3-4 minutes per side over medium-high heat in batches– do not crowd in pan.

warm sauce in a pot

place cooked cutlets on a rack over a cookie sheet and top with sliced cheese

cook 7-10 minutes until cheese melts

ladle warm sauce on plate and place cutlet with cheese on top of sauce and serve
