pork tacos al pastor are so easy to replicate at home in less than 30 minutes.
Ingredients
- 1 package pork chops thin sliced, sliced into ¼ inch strips
- 1 fresh pineapple or fresh sliced
- 1 cup pineapple juice
- ¼ cup canola oil
- 3 chipotle peppers and 1 tbl adobo sauce
- 1 clove garlic
- 1 white onion diced
- ¼ cup cilantro leaves
- monterey jack cheese
- 8-10 tortillas
Instructions

preheat cast iron skillet

mix 1 slice pineapple, ¾ cup pineapple juice, canola oil, chipotle peppers, adobo sauce and garlic in a blender

pour over pork in a plastic bag and marinate at room temp for 10-15 minutes or in the refrigerator for 1-2 hours

chop remaining pineapple slices into chunks

saute pork, until charred and cooked through, 5-7 minutes

remove pork and saute onions about 2 minutes

add pineapple and remaining ¼ cup pineapple juice and the pork and cook 1-2 minutes

warm tortillas

serve tacos topped with monterey jack cheese and cilantro
