Ingredients
- 1 package frozen spinach thawed and squeezed dry
- ½ cup crumbled feta
- 1/8 cup sundried tomatoes chopped
- zest and juice of 1 lemon
- 1 package thick cut pork chops
- salt & pepper
- 1 tbl dijon mustard
- ¼ tsp oregano
Instructions

preheat broiler

mix spinach, feta and sun dried tomatoes and lemon zest together

make a slit down the side of the pork chop to create a pocket

stuff the chops with the spinach mixture

season with salt & pepper

mix lemon juice, dijon mustard and oregano

place the pork chops on a broiler pan and coat the top with ½ the mustard mixture
-
broil 5 minutes and turn
-
brush the other side with the mustard and broil 2-3 minutes more until cooked through
