Ingredients
- 1 whole chicken cut-up
- salt & pepper
- 2 tablespoons butter melted
- 1 head garlic cut in half
- 4 carrots cut in 1/2
- 1 sweet potato cut in 1/8’s
- 1 large white potato cut in ¼’s
- 2 onions cut in ¼’s
- 1 bunch fresh thyme
Instructions

preheat the oven to 425-degrees

salt and pepper the chicken

place chicken on 2 sheet pans lined with parchment or foil

brush chicken with ¾ of the melted butter

scatter garlic, carrot, potatoes and onions around chicken

drizzle vegetables with the remaining butter and salt & pepper

scatter the thyme over everything and bake 30-40 minutes turning the vegetables ½ way through cooking
Recipe Notes
Have the butcher at the supermarket cut the chicken breasts in 1/2 so everything will cook more evenly, and they do it for free!
