roasted chicken in a Dijon sauce is fancy enough for guests and can be made with any chicken parts.
Ingredients
- 1 package chicken parts
- 1 tbl canola oil
- salt & pepper
- 2 shallots thinly sliced
- ½ cup white wine
- ½ cup chicken broth
- ¼ cup heavy cream
- 2 tbl dijon mustard
- 1 tbl chopped chives or parsley
Instructions

preheat oven to 450 degrees

heat a cast iron skillet with canola oil

season the chicken with salt & pepper
-
brown chicken in 2 batches for 5 minutes per batch

return all the chicken to the pan and place in oven
-
roast until cooked through 15-20 minutes
-
transfer chicken to a platter
-
add the shallots, wine and broth to the pan and bring to a boil, scrapping up any browned bits
-
reduce for 2-3 minutes and add cream
-
boil until thick 1 minute longer
-
strain sauce into a bowl and add mustard and chives, salt & pepper
-
serve with the chicken
