Ingredients
- 1 tbl olive oil
- 1 tbl sesame oil
- 1 small red onion , minced
- 2 cloves garlic , minced
- 1 tsp ginger , minced
- ¼ tsp crushed red pepper flakes
- 2 tbl red wine vinegar
- ¼ cup light brown sugar
- 2 tbl soy sauce
- ½ cup peanut butter
- ¼ cup ketchup
- 2 tbl dry sherry
- ½ lime , juiced
- 1 rotisserie chicken
- wooden skewers
Instructions

heat olive oil and sesame oil in a pot

saute red onion, garlic, ginger and red pepper flakes, until transparent, 5-10 minutes

add the vinegar, brown sugar, soy sauce, peanut butter, ketchup, sherry and lime juice

cook for 1-2 minutes and cook

cut chicken breasts off chicken and remove the skin
-
cut breast into chunks and skewer

serve with sauce
