Ingredients
- 1 lb smoked sausage sliced ½ inch thick
- 1 tbl canola oil
- 1 red bell pepper finely chopped
- 1 green bell pepper finely chopped
- 1 onion finely chopped
- 2 stalks celery finely chopped
- 3 scallions finely chopped
- 2 cloves garlic finely chopped
- 1 lb white rice
- 1 can diced tomatoes 28 oz
- 3 ½ cups water
Instructions

cook sausage in oil until browned, about 5 minutes

remove sausage

saute peppers, onion, celery, scallions and garlic until golden brown, about 10 minutes

stir in rice, sausage, tomatoes, water and salt & pepper and bring to a boil

cover and simmer until rice is cooked through, about 20-25 minutes

let stand 5 minutes and fluff with a fork
