Ingredients
- 1 tsp olive oil
- 1 package ground beef around 10 oz
- salt & pepper
- 1 poblano pepper diced
- 1 onion diced
- 1 bunch of scallions chopped, white and green separate
- 2 cloves garlic minced
- 1 tsp chili powder
- 1 tsp cumin
- 1 cup beef stock
- 1 can kidney beans drained and rinsed
- 1 28 oz can crushed tomatoes
Instructions

heat oil in a skillet

brown the ground beef, breaking it up as it cooks

season with salt & pepper and chili powder

remove the ground beef to a plate
-
saute the poblano chili, the onion, the white part of the scallions and the garlic until slightly softened

add the beef back in and season with chili powder and cumin
-
add beef stock, beans and tomatoes and 1 cup water and bring to a boil
-
reduce heat to a simmer and cook until thick, about 10 minutes

serve the shredded cheddar cheese, sour cream and the green scallions
