Ingredients
- ½ lb rice noodles about ¼ inch thick
- 2 tbl peanut oil
- 1 lb ground pork
- ¼ cup plus 1 ½ tbl soy sauce
- 1 tbl rice wine vinegar
- 3 scallions thinly sliced, divided in 1/2
- 3 cloves garlic minced
- 1- inch knob of ginger finely chopped
- 1 head bok choy thinly sliced
- 1 tsp hot chili oil
- 2 tbl sesame seeds toasted
- 1 ½ tbl sesame oil
Instructions

cook noodles in boiling salted water and rinse with cold water and drain

heat a wok or large frying pan

in 1 tbl peanut oil, saute the ground pork, breaking up until cooked through, about 10 minutes

remove to a bowl and toss with 1 ½ tbl soy sauce and rice wine vinegar

saute ½ the scallions, the garlic and the ginger in remaining 1 tbl peanut oil

add the bok choy and cook until tender about 3 minutes

add the noodles, the ¼ cup of soy sauce and the hot chili oil

toss together until warm

transfer to a serving bowl and toss with the sesame seeds and sesame oil

server topped with the remaining scallions
