Ingredients
- 1 tbl canola oil
- 1 jalapeño pepper minced
- 2 poblano peppers diced
- 1 onion diced
- 3 cloves garlic minced
- salt & pepper
- 1 tbl cumin
- 1 tbl chili powder
- 1 carton chicken broth
- 1 can white beans
- 2 limes juiced, plus 1 cut in wedges
- ½ cup cilantro chopped
- 1 rotisserie chicken
- ½ cup of masa mixed with ½ cup water to make a paste
- tortilla chips
Instructions

saute jalapeño pepper, poblano pepper, onion and garlic in canola oil for 5 minutes

add salt & pepper, cumin and chili powder

saute for 1 minute until fragrant

add chicken broth and bring to a simmer

add lime juice, ¼ cup cilantro, beans and their juices and simmer for 5 minutes

add chicken and masa paste and simmer for 5 minutes until thickened

serve topped with cilantro, tortilla chips, sour cream and lime wedges
