rotisserie chicken satay

Ingredients

  • 1 tbl olive oil
  • 1 tbl sesame oil
  • 1 small red onion , minced
  • 2 cloves garlic , minced
  • 1 tsp ginger , minced
  • ¼ tsp crushed red pepper flakes
  • 2 tbl red wine vinegar
  • ¼ cup light brown sugar
  • 2 tbl soy sauce
  • ½ cup peanut butter
  • ¼ cup ketchup
  • 2 tbl dry sherry
  • ½ lime , juiced
  • 1 rotisserie chicken
  • wooden skewers

Instructions

  1. heat olive oil and sesame oil in a pot
  2. saute red onion, garlic, ginger and red pepper flakes, until transparent, 5-10 minutes
  3. add the vinegar, brown sugar, soy sauce, peanut butter, ketchup, sherry and lime juice
  4. cook for 1-2 minutes and cook
  5. cut chicken breasts off chicken and remove the skin
  6. cut breast into chunks and skewer
  7. serve with sauce
