spicy ginger pork noodles with bok choy

Ingredients

  • ½ lb rice noodles about ¼ inch thick
  • 2 tbl peanut oil
  • 1 lb ground pork
  • ¼ cup plus 1 ½ tbl soy sauce
  • 1 tbl rice wine vinegar
  • 3 scallions thinly sliced, divided in 1/2
  • 3 cloves garlic minced
  • 1- inch knob of ginger finely chopped
  • 1 head bok choy thinly sliced
  • 1 tsp hot chili oil
  • 2 tbl sesame seeds toasted
  • 1 ½ tbl sesame oil

Instructions

  1. cook noodles in boiling salted water and rinse with cold water and drain
  2. heat a wok or large frying pan
  3. in 1 tbl peanut oil, saute the ground pork, breaking up until cooked through, about 10 minutes
  4. remove to a bowl and toss with 1 ½ tbl soy sauce and rice wine vinegar
  5. saute ½ the scallions, the garlic and the ginger in remaining 1 tbl peanut oil
  6. add the bok choy and cook until tender about 3 minutes
  7. add the noodles, the ¼ cup of soy sauce and the hot chili oil
  8. toss together until warm
  9. transfer to a serving bowl and toss with the sesame seeds and sesame oil
  10. server topped with the remaining scallions
